Planting
All cachaça begins with sugarcane—ours is grown organically, free from pesticides or additives. This sustainable approach not only enriches the flavor, but helps protect the entire ecosystem it grows in.


Grinding
Once harvested, the sugarcane is milled to extract its fresh juice, known as garapa. The leftover stalks, called bagasse, are repurposed as biofuel or mulch—ensuring every part of the plant contributes to sustainable cachaça production.

Fermetation
Like beer and wine, cachaça begins with fermentation. In this stage, the sugarcane juice is combined with water and organic matter, and within 24 hours, it transforms into what’s known as “cane wine.” At Seven Waves, we rely on wild yeast native to our sugarcane fields, allowing the land and its microbes to shape a flavor that is distinct to each terroir.

Filtering
The sugarcane juice is filtered and decanted to remove impurities. The result is called must.

Distillation
The cane wine is heated in a traditional copper still, known as an alembic. As it boils, the vapors rise, condense, and are cooled—concentrating the alcohol in the process.

Resting
Stored in wooden barrels, cachaça undergoes a required minimum aging of 90 days. At Seven Waves, we go far beyond that—resting our spirit for longer periods to develop greater complexity and smoothness. The flavor is further influenced by the choice of wood, barrel design, and aging time.

Bottling
The final step is bottling. At this point, the cachaça is ready to be shipped and savored.
